Easy Shrimp Coconut Curry

Ingredients

  • 1 pound shrimp
  • 1 zucchini
  • 1 bell pepper
  • 1 onion
  • 1/2 teaspoon curry powder
  • 1/2 cup spinach
  • 2 tablespoons red curry paste
  • 1 can full-fat coconut milk
  • 1/4 cup water
  • Avocado oil for cooking

Optional

  • Sriracha to taste

Preparation

  1. Heat a pan over medium heat.

  2. Add avocado oil to coat the pan.

  3. Add zucchini, onion, and pepper, sprinkle with 1-2 teaspoons curry powder, and cook for 10 minutes until soft.

  4. Add precooked shrimp and spinach, sprinkle with 1 teaspoon curry powder, and cook for 5 minutes.

  5. Add coconut milk, 2 tablespoons red curry paste, and 1/4 cup water.

  6. Bring to a boil, then let simmer for 10 minutes.

  7. Serve with cauliflower rice and cilantro.
