Easy Shrimp Coconut Curry
Ingredients
- 1 pound shrimp
- 1 zucchini
- 1 bell pepper
- 1 onion
- 1/2 teaspoon curry powder
- 1/2 cup spinach
- 2 tablespoons red curry paste
- 1 can full-fat coconut milk
- 1/4 cup water
- Avocado oil for cooking
Optional
- Sriracha to taste
Preparation
Heat a pan over medium heat.
Add avocado oil to coat the pan.
Add zucchini, onion, and pepper, sprinkle with 1-2 teaspoons curry powder, and cook for 10 minutes until soft.
Add precooked shrimp and spinach, sprinkle with 1 teaspoon curry powder, and cook for 5 minutes.
Add coconut milk, 2 tablespoons red curry paste, and 1/4 cup water.
Bring to a boil, then let simmer for 10 minutes.
Serve with cauliflower rice and cilantro.
