Blackened Shrimp with Vegetables

Ingredients

  • 1 pound shrimp
  • 1 teaspoon garlic powder
  • 1 tablespoon chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1 tablespoon olive oil
  • 1 medium zucchini
  • 2 cups kale

Preparation

  1. Heat a skillet over medium heat.

  2. In a bowl, mix together the spices.

  3. Coat the shrimp with the olive oil and add the spices, coating the shrimp.

  4. Once the skillet is heated, add a little oil to coat the pan then add the shrimp. Cook for about 5 minutes.

  5. Add in zucchini and cook for 5 more minutes.

  6. Add kale and cook until kale is soft, about 2 minutes.

  7. Serve with leftover roasted brussel sprouts.
