Blackened Shrimp with Vegetables
Ingredients
- 1 pound shrimp
- 1 teaspoon garlic powder
- 1 tablespoon chili powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1 tablespoon olive oil
- 1 medium zucchini
- 2 cups kale
Preparation
Heat a skillet over medium heat.
In a bowl, mix together the spices.
Coat the shrimp with the olive oil and add the spices, coating the shrimp.
Once the skillet is heated, add a little oil to coat the pan then add the shrimp. Cook for about 5 minutes.
Add in zucchini and cook for 5 more minutes.
Add kale and cook until kale is soft, about 2 minutes.
Serve with leftover roasted brussel sprouts.
