Healthy Vegan Mac and Cheese Alternative
Ingredients
- 2 medium-sized potatoes
- 1/2 medium-sized carrot
- 1 small onion
- 1 medium clove garlic
- 1/2 cup cashews
- 3/4 cup water
- 1/4 cup soy milk
- 4 tbsp nutritional yeast
- 1 tbsp lemon juice
- 1 tsp sea salt
- dash of paprika
- dash of cayenne
Preparation
While your pasta is cooking, sauté garlic, onions, carrots, and cook potatoes until tender.
Once tender, blend cooked veggies with cashews, water, soy milk, nutritional yeast, lemon juice, sea salt, paprika, and cayenne until smooth.
Drain pasta, pour sauce over it, mix, and enjoy.
