Quick and Easy Chicken Curry

Ingredients

  • 2 roaster chicken (these were quite small, you can use 1 larger chicken if you prefer)
  • 4 small onions
  • 2 tsp garlic paste
  • 2 tsp ginger paste
  • 2 whole green chillies
  • 1/2 cup oil (reserve 2 tbsp from this amount)
  • 2 tsp salt (adjust to taste)
  • 2 tsp mixed curry powder
  • 1 tsp chilli powder
  • 1 tsp Kashmiri chilli powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp garam masala (recipe on the website)

Preparation

  1. Blitz all of the above ingredients except the chicken in a blender, add a little water to create a smooth paste.

  2. Heat the reserved 2 tbsp of oil in a saucepan, once hot add the blended masala paste and fry for a few minutes, this helps remove the rawness of the onion, ginger, garlic and spices. Next add the chicken and mix it well with the sautéed masala.

  3. Cook over a medium high heat for 20 mins and then lower and simmer for another 15 - 20 mins. The curry is ready when the chicken is fully cooked and the oil has separated from the masala (bubbling around the edges and top of the curry). Garnish with coriander and serve with hot rice or flatbread.
