Salted Caramel Cookie Bars
Ingredients
- 260g flour
- 1tsp baking powder
- 1tsp baking soda
- 1/2 tsp salt
- 65g brown sugar
- 65g caster sugar
- 120ml melted margarine - or use a neutral oil
- 60ml soya milk
- 1-2 handfuls of chocolate chips
- salted caramel sauce
- 250ml soya cream
- 50ml syrup
- 6 tbsp brown sugar
- 1/2-2/3 tsp salt
- 1tbsp vegan margarine
Preparation
Mix together the dry ingredients for the cookie dough. Melt the margarine and mix together with the rest of the wet ingredients. Pour the wet ingredients into the dry ingredients. Add the chocolate chips and mix. Place in the fridge for 30-60minutes. ▪︎
Make the caramel sauce by heating up the cream, brown sugar, syrup and sea salt. Let it boil for about 8-10 minutes stirring regularly. Once it's begun to thicken, add the margarine and set aside to cool. NOTE it does need to cool for about 30-60 minutes until thickened... but if it doesn't thicken at all just reheat for another few minutes ▪︎
Heat oven to 175C. Grease a baking form
Place half of the cookie dough into the bottom of the tray. Pour the salted caramel on top. Add the other half of the cookie dough. Bake in the oven around 25-35 minutes depending on how thick the bars are
NOTE it will still be slightly loose but once it's cooled down it will firm up and you don't want it burnt or crispy
Top with sea salt. Place in the fridge for several hours. Before serving add some caramel sauce on top
