Sticky Sesame Cauliflower with Garlic and Soy
Ingredients
- 1 small-medium cauliflower
- 3/4 cup all-purpose flour
- 2 teaspoons garlic powder
- 1/2 teaspoon salt
- 3/4 cup unsweetened non-dairy milk
- 1 large garlic clove
- 1/4 cup apricot fruit jam
- 2 tablespoons soy sauce or tamari
- toasted sesame seeds
Preparation
Cut 1 small-medium cauliflower into bite-size florets, about 3 cups.
In a large bowl, whisk together 3/4 cup all-purpose flour, 2 teaspoons garlic powder, and 1/2 teaspoon salt. Slowly add 3/4 cup unsweetened non-dairy milk while stirring. Add the cauliflower florets and mix to coat them in the batter.
Transfer the coated cauliflower to a lined baking sheet. Bake at 450°F for about 20 minutes or until they start to turn golden. Broil for an additional 2-3 minutes for extra crispness.
Meanwhile, make the sauce by mixing 1 large minced garlic clove, 1/4 cup apricot fruit jam, and 2 tablespoons soy sauce or tamari. Heat the sauce in a small-medium skillet, add the baked cauliflower, and gently mix until coated and warmed through, about 2-3 minutes. Serve immediately and top with toasted sesame seeds.
