Sweet Potato and Carrot Vegan Mac and Cheese
Ingredients
- 1 large sweet potato
- 2 carrots
- 1 cup raw cashew
- 1 medium yellow onion
- 3 cloves garlic
- 1 Tbl white miso
- 1/2 cup nutritional yeast
- 1 tsp salt
- 2 cups oatmilk
- 1 Tbl tapioca starch
Preparation
Peel sweet potato and carrot.
Boil with cashews for 15 min.
Brown onion and garlic using a little water at a time instead of oil.
Drain boiled ingredients.
Add all ingredients into a blender and puree until smooth.
Pour over one pound of cooked pasta of your choice. I used Cellantani pasta.
Makes 8 servings and with the pasta it's 14 grams of plant based protein per serving.
Add in some sweet peas and/or baked tofu for even more protein.
