Sweet Potato and Carrot Vegan Mac and Cheese

Ingredients

  • 1 large sweet potato
  • 2 carrots
  • 1 cup raw cashew
  • 1 medium yellow onion
  • 3 cloves garlic
  • 1 Tbl white miso
  • 1/2 cup nutritional yeast
  • 1 tsp salt
  • 2 cups oatmilk
  • 1 Tbl tapioca starch

Preparation

  1. Peel sweet potato and carrot.

  2. Boil with cashews for 15 min.

  3. Brown onion and garlic using a little water at a time instead of oil.

  4. Drain boiled ingredients.

  5. Add all ingredients into a blender and puree until smooth.

  6. Pour over one pound of cooked pasta of your choice. I used Cellantani pasta.

  7. Makes 8 servings and with the pasta it's 14 grams of plant based protein per serving.

  8. Add in some sweet peas and/or baked tofu for even more protein.
