Vegan Chick'n Noodle Soup

Ingredients

  • 10 oz pasta of your choice
  • 2 boxes of vegetable broth
  • 2 cups of water
  • 3-4 celery stalks
  • 1 small onion
  • 3 carrots
  • 1 packet of @the_tofurky_company chick’n
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • salt and pepper to taste

Preparation

  1. You will need a large pot and a pan.

  2. Add two boxes of vegetable stock to the pot and heat on high until it boils.

  3. While waiting for the pot to boil, chop the onion, celery, and carrots. Heat a pan on medium-high and add 1 tablespoon of oil to sauté the onion and celery.

  4. Once the vegetable broth begins to boil, add the carrots and reduce heat to a simmer. Simmer for 5 minutes, then add the pasta, chick’n, and two cups of water. Season with Italian seasoning, salt, and pepper, and simmer for 15 minutes.

  5. After 15 minutes, add the celery and onions to the pot. If desired, add an extra tablespoon of oil to make it more like chicken soup.
