Zucchini Noodles with Herb Brazil Nut Cheese

Ingredients

  • 3 zucchini, spiralized
  • 1 cup arugula

Brazil nut herb cheese sauce

  • 1 cup raw Brazil nuts (soaked in water for at least 2 hours)
  • 1/4 cup fresh rosemary
  • 2 tbsp fresh thyme
  • 2 tbsp fresh sage
  • juice of 1 lemon
  • Sea salt and black pepper to taste
  • 1/2 cup water or more to blend

Preparation

  1. Blend all ingredients together until smooth.

  2. In a large bowl mix zucchini noodles, arugula and sauce together. Enjoy!
