Zucchini Noodles with Herb Brazil Nut Cheese
Ingredients
- 3 zucchini, spiralized
- 1 cup arugula
Brazil nut herb cheese sauce
- 1 cup raw Brazil nuts (soaked in water for at least 2 hours)
- 1/4 cup fresh rosemary
- 2 tbsp fresh thyme
- 2 tbsp fresh sage
- juice of 1 lemon
- Sea salt and black pepper to taste
- 1/2 cup water or more to blend
Preparation
Blend all ingredients together until smooth.
In a large bowl mix zucchini noodles, arugula and sauce together. Enjoy!
