Homemade Vegan Almond Ricotta Cheese

Ingredients

  • 1 1/2 cups balanced almonds (soaked overnight)
  • 3-4 tbsp water
  • 2 tbsp freshly squeezed lemon juice
  • 1/2 tsp sea salt

Preparation

  1. Rinse almonds and place in blender.

  2. Pulse a few times then add lemon juice, salt and 2 tbsp water, pulse again.

  3. Add remaining water and blend till smooth and creamy and no chunks of almond is left.

  4. Refrigerate in a sealed container for up to a week.
