Blueberry Pancakes with Banana and Maple Syrup
Ingredients
- 1 small mashed banana
- 2 large eggs
- 1/3 cup oat flour
- 1 tsp cinnamon
- a handful of blueberries
Preparation
Put the banana in a bowl and mash with a fork.
Add the eggs and mix until well combined.
Add the oat flour.
Add the oats and cinnamon to the mix, and stir well.
Heat a pan over a medium heat with a dash of olive or coconut oil.
Spoon the mix into the pan to make individual pancakes, cook on one side for about 1.5 minutes and place some blueberries on top, then turn and cook on the other side for about 1 minute or until golden brown on both sides.
Serve with banana and maple syrup and enjoy.
