Kimchi Fried Rice with Tofu
Ingredients
- 1/2 pack of @cauldronfoods tofu
- 5/6 shiitake mushrooms
- 1/2 a red onion
- 3/4 tbsp kimchi
- 2 sprigs of spring onion
- 1 red chilli
- 2 cloves of garlic
- 1 inch piece of ginger
- 1 tsp turmeric
- 200g cooked rice
- Salt & pepper
- Sesame oil
- Soya sauce
Preparation
Heat a pan and start by crumbling the tofu in with the turmeric and some salt and pepper. Scramble the tofu until edges are going crisp. Remove from pan and set aside.
Finely chop onion, garlic, chilli and ginger. Slice shiitake mushrooms.
Fry the onion first for 5-7 minutes until soft and then add garlic, ginger and chilli and fry for another minute.
Add in shiitake mushrooms and fry for another 5 minutes.
Chop the kimchi into smaller chunks.
Add the scrambled tofu back to the pan along with the cooked rice and fry for another 5 minutes to warm everything through.
Stir in the kimchi and season with soya sauce to taste.
Serve with chopped fresh spring onion.
