Open Faced Vegan Breakfast Sandwich
Ingredients
- 1 slice Little Northern Bakehouse GFV bread
- Organic Girl arugula
- sliced avocado
- Eat Just vegan folded egg
- tomato slices
- green onions
- Trader Joe's EBTB seasoning
- hot sauce of choice (optional)
- Miyoko's Creamery pepper jack slice (optional)
Preparation
Toast the bread lightly.
Toast the vegan folded egg for 6 minutes.
Slice the avocado, tomato, and green onions if not already sliced.
Assemble the sandwich by layering arugula, avocado, egg, tomato, and green onions on the bread. Sprinkle with EBTB seasoning and add optional hot sauce and cheese.
