Sweet Potato Toasts with Topping Variations

Ingredients

  • 1 sweet potato (I love @bakosweet the most) sliced lengthwise into 1/4" thick slices

Muffaletta toppings

  • chopped olives
  • chopped parsley
  • finely chopped red pepper
  • splash of @bragglivefoodproducts ACV
  • splash of olive oil
  • garlic powder
  • salt and pepper
  • tomatoes and parsley for topping

Beet avocado toppings

  • @thebrinery beet ginger sauerkraut
  • sliced avocado
  • @bienasnacks crunchy chickpeas
  • @traderjoes EBTB
  • @rayfamilyfarmsia mizuna mustard microgreens

Vegan cucumber lox toppings

  • @miyokoscreamery UnLox Your Dreams cream cheese
  • sliced cucumber
  • sliced onion
  • lemon thyme

Tomato ricotta toppings

Spicy cashew banana toppings

Preparation

  1. Place in toaster and toast on high for 2 cycles (5-7 min) until the middle or thickest part is tender.

  2. Remove and top with any of the combinations below!
