Slow Cooker Rotisserie Chicken
Ingredients
- 1 medium chicken (1.7kg)
- 2 tbsp olive oil
- 1 tsp garlic salt
- 2 tsp paprika
- 1/2 tsp salt
- 1/2 tsp ground black pepper
Preparation
You will need a shelf for the chicken to sit on in the slow cooker, use a round cake tin or create one by rolling up some tin rolling into a thick ‘o’ shape
Pat the chicken dry inside and out with some kitchen towel, then mix the olive oil and seasonings together in a small bowl and paint the chicken all over with the mixture and a pastry brush
Place the chicken on the shelf in the cooker
Lock on the lid, and set the chicken to low for 8 hours (from chilled) if your chicken isn’t the same size as listed, cook it using the temperature setting and probe and cook to 72 degrees
Pop the chicken in the slow cooker heatproof pot in a hot oven at the end for ten mins if you like extra crispy skin
