Strawberry Cheesecake Swirl Blondies with White Chocolate

Ingredients

Dough

  • 125 g softened butter
  • 70 g sugar
  • 1 packet vanilla sugar
  • a pinch of salt
  • 2 large eggs
  • 200 g all-purpose flour
  • 1 tsp baking powder
  • 200 g white chocolate
  • butter, for greasing pan

Cheesecake swirl

  • 300 g cream cheese
  • 50 g sugar
  • 1 large egg
  • 1 tsp cornstarch
  • 200 g strawberries

Preparation

  1. Preheat the oven to 180°C conventional or 160°C convection. Grease a small baking sheet (28.5 x 23 cm) well

  2. Cream the butter with the sugars and salt. Gradually mix in the eggs. Combine the flour with the baking powder and add to the butter-sugar mixture. Chop the white chocolate and fold into the batter. Pour the batter into the prepared pan and smooth the top

  3. In a separate bowl, beat the cream cheese, sugar, egg, and cornstarch. Pour the mixture over the batter in the pan and marble with a fork or knife

  4. Wash the strawberries, remove the stems, and cut into small pieces. Place the strawberries on the marbled batter and press down lightly. Bake the blondies in the preheated oven for about 40 minutes

Tips

  1. To check if the blondies are done, insert a wooden skewer. If it comes out with only a few small crumbs or clean, the blondies are done. For blondies or brownies, it's common to take them out a few minutes early if there are still small crumbs attached to the skewer, which ensures a moist texture
