Stuffed Zucchini with Bulgur and Yogurt

Ingredients

  • 1 kg zucchini

Stuffing

  • 1 cup coarse bulgur
  • 200 g ground meat
  • 1 large chopped onion
  • 1 tbsp salt
  • 1/4 tsp black pepper
  • 1/2 tbsp cinnamon
  • 1 tsp mixed spices
  • 1 tsp cumin
  • 1/4 cup corn oil

Yogurt sauce

  • 5 cups yogurt
  • 1 tbsp starch
  • 1 tsp salt
  • 4 cloves minced garlic
  • 1 tsp dried mint
  • 2 tbsp ghee

Preparation

  1. Prepare the stuffing by mixing all stuffing ingredients together in a bowl.

  2. Hollow out the zucchini carefully to create space for the stuffing.

  3. Stuff the hollowed zucchini with the prepared stuffing mixture.

  4. Cook the stuffed zucchini in boiling water or bake in the oven until tender.

  5. For the yogurt sauce, combine yogurt, starch, salt, minced garlic, and dried mint in a pot.

  6. Heat the yogurt sauce gently while stirring until it thickens, then add ghee and mix well.

  7. Serve the cooked stuffed zucchini topped with the yogurt sauce.
