Baked Cauliflower Alfredo

Ingredients

Alfredo

  • 1 small cauliflower
  • 1/2 sweet onion diced
  • 4 garlic cloves
  • 1 tbsp nutritional yeast
  • 1/4 tsp oregano
  • 1/4 tsp basil
  • 1/4 c veggie broth

Sauté vegetables

  • 2 cloves garlic
  • Handful mushrooms
  • Handful Broccolini
  • Pinch of salt

Pasta

  • Cooked Pasta

Preparation

  1. Preheat oven to 200°C and bake cauliflower until tender

  2. Cook onion and garlic in a pan, add remaining Alfredo ingredients, and blend into a sauce

  3. Sauté garlic, mushrooms, and broccolini with salt until softened

  4. If not already cooked, prepare pasta according to package instructions

  5. Combine Alfredo sauce, sautéed vegetables, and pasta, then serve warm
