Creamy Vegan Zucchini Noodles with Sauce

Ingredients

  • Zucchini for noodles
  • 1 cup coconut milk or plant-based milk
  • 1-2 tablespoons nutritional yeast
  • 1 cup peanuts or cashews
  • Juice of one lime
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon garlic powder or fresh garlic
  • 1/2 teaspoon onion powder or fresh onions
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Preparation

  1. Make zucchini noodles using a spiralizer or similar tool.

  2. Blend all the sauce ingredients together until smooth.

  3. Combine the zucchini noodles with the creamy sauce.

  4. Eat immediately to avoid the noodles becoming soggy.
