Creamy Vegan Zucchini Noodles with Sauce
Ingredients
- Zucchini for noodles
- 1 cup coconut milk or plant-based milk
- 1-2 tablespoons nutritional yeast
- 1 cup peanuts or cashews
- Juice of one lime
- 1/4 teaspoon turmeric
- 1/2 teaspoon garlic powder or fresh garlic
- 1/2 teaspoon onion powder or fresh onions
- 1/2 teaspoon paprika
- Salt and pepper to taste
Preparation
Make zucchini noodles using a spiralizer or similar tool.
Blend all the sauce ingredients together until smooth.
Combine the zucchini noodles with the creamy sauce.
Eat immediately to avoid the noodles becoming soggy.
