Sweet Crispy Fluffy Paleo Pumpkin Waffle
Ingredients
- 1/3 cup pumpkin purée
- 3 tbsp coconut oil
- 1/3 cup @bobsredmill almond flour
- 1/3 cup tapioca flour (optional: makes it firmer ??)
- 2 eggs
- 1 tsp Pumpkin Pie spice
- 1 tbsp maple syrup
- 1 heaping tsp baking powder
Toppings
- Sautéed apples
- Hu Kitchen GEM chocolate
- Georgia Grinders pecan butter
- maple syrup
Preparation
In a bowl, mix together the dry ingredients: almond flour, tapioca flour, baking powder, and pumpkin pie spice.
In another bowl, whisk the wet ingredients: pumpkin purée, coconut oil, eggs, and maple syrup.
Combine the wet and dry mixtures until just blended, being careful not to overmix.
Preheat the waffle iron according to manufacturer instructions.
Pour the batter into the preheated waffle iron and cook until golden, crispy, and fluffy, about 3-5 minutes.
For the toppings, sauté the apples in a pan over medium heat until soft and caramelized.
Assemble the waffle by adding sautéed apples, GEM chocolate, pecan butter, and a drizzle of maple syrup.
