Curry Peanut Noodle Bowl with Sauce

Ingredients

Curry peanut sauce

  • 1/4 cup peanut butter
  • 3 tbsp gluten free soy sauce
  • 2 tsp garlic chili sauce
  • 1 tbsp maple syrup or brown sugar
  • 1 tsp Thai curry paste
  • 1/2 tsp ground ginger
  • 1/2 tsp pepper flakes
  • 1/4 cup water

Noodle components

  • veggies of choice
  • cooked noodles
  • sesame seeds
  • baked tofu
  • green onion

Preparation

Sauce

  1. In a bowl whisk all ingredients together until smooth.

  2. If sauce is too thick, add a splash of water and whisk until consistency is a little thinner to your liking.

Noodle assembly

  1. Stir fry veggies of choice until tender.

  2. Add cooked noodles plus 1/4 cup of the peanut sauce.

  3. Stir to combine and remove from heat.

  4. Serve immediately and top with sesame seeds, baked tofu and green onion.
