Curry Peanut Noodle Bowl with Sauce
Ingredients
Curry peanut sauce
- 1/4 cup peanut butter
- 3 tbsp gluten free soy sauce
- 2 tsp garlic chili sauce
- 1 tbsp maple syrup or brown sugar
- 1 tsp Thai curry paste
- 1/2 tsp ground ginger
- 1/2 tsp pepper flakes
- 1/4 cup water
Noodle components
- veggies of choice
- cooked noodles
- sesame seeds
- baked tofu
- green onion
Preparation
Sauce
In a bowl whisk all ingredients together until smooth.
If sauce is too thick, add a splash of water and whisk until consistency is a little thinner to your liking.
Noodle assembly
Stir fry veggies of choice until tender.
Add cooked noodles plus 1/4 cup of the peanut sauce.
Stir to combine and remove from heat.
Serve immediately and top with sesame seeds, baked tofu and green onion.
