Crispy Tofu Noodles with Peanut Sauce

Ingredients

  • noodles
  • tofu
  • red cabbage
  • arugula
  • tomatoes
  • red pepper
  • radish
  • vegan feta (sprinkle)

Peanut butter sauce

  • 2 tbsp peanut butter
  • 0.5 dl hot water
  • 2 tbsp coconut aminos
  • 1/2 tbsp agave syrup
  • 1 tsp sriracha
  • a sprinkle of salt

Preparation

  1. Blend the peanut butter sauce ingredients together in a bowl.

  2. Fry the tofu until crispy

  3. Add the sauce on top of the crispy tofu and mix until well coated.

  4. Cook the noodles according to package instructions

  5. Prepare the vegetables by chopping or slicing as desired

  6. Assemble by combining noodles, vegetables, and sauced tofu in a bowl
