Dark Chocolate Candy Bars

Ingredients

Crust

  • 1/3 cup cashews
  • 2 tbsp flax meal
  • 1 tbsp pure monk fruit or maple
  • 1/2 tbsp vegan butter
  • 1/2 tbsp coconut oil

Filling

  • 2 tbsp almond butter
  • 2 tbsp coconut butter
  • 2 tbsp coconut milk
  • 2 tbsp coconut flour
  • 1 tbsp cacao nibs

Nutty chocolate topping

  • 1/4 cup extra dark chocolate
  • 2 tbsp chopped cashews

Preparation

  1. Pulse the cashews in a food processor until crumbled.

  2. Mix all the crust ingredients together.

  3. Spread the mixture in a layer in a shallow dish.

  4. Freeze for 15-20 minutes until hardened.

  5. Mix the filling ingredients together until a dough forms.

  6. Spread the filling over the crust.

  7. Melt the chocolate in a saucepan, stirring constantly.

  8. Once the chocolate is melted, add the chopped cashews.

  9. Pour the chocolate mixture over the bars.

  10. Re-freeze for at least 20 minutes.
