Decadent Chocolate Energy Balls
Ingredients
- 1 cup pitted medjool dates
- 1/4 cup pumpkin seeds
- 2 tbsp coconut butter
- 1 tbsp creamy almond butter
- 1/4 cup coconut flour
- 1/4 cup flax meal
- 1/4 cup hazelnut or almond flour
- 2 tbsp cacao nibs
- 2 tbsp shredded coconut
Drizzle
- 2 oz extra dark chocolate
Preparation
Soak the pitted medjool dates and pumpkin seeds in water for at least 10 minutes to soften.
Mix the seeds and dates in a food processor until well combined and the dates are broken down.
Add the remaining ingredients except the cacao nibs and shredded coconut, and blend until a dough ball forms.
Transfer the mixture to a large bowl and knead in the cacao nibs and shredded coconut.
Roll the mixture into balls and refrigerate for 10 minutes.
Meanwhile, melt the chocolate in a saucepan, stirring constantly.
Drizzle the melted chocolate over the balls and store in the refrigerator; the balls will firm up within 30 minutes.
