Decadent Chocolate Energy Balls

Ingredients

  • 1 cup pitted medjool dates
  • 1/4 cup pumpkin seeds
  • 2 tbsp coconut butter
  • 1 tbsp creamy almond butter
  • 1/4 cup coconut flour
  • 1/4 cup flax meal
  • 1/4 cup hazelnut or almond flour
  • 2 tbsp cacao nibs
  • 2 tbsp shredded coconut

Drizzle

  • 2 oz extra dark chocolate

Preparation

  1. Soak the pitted medjool dates and pumpkin seeds in water for at least 10 minutes to soften.

  2. Mix the seeds and dates in a food processor until well combined and the dates are broken down.

  3. Add the remaining ingredients except the cacao nibs and shredded coconut, and blend until a dough ball forms.

  4. Transfer the mixture to a large bowl and knead in the cacao nibs and shredded coconut.

  5. Roll the mixture into balls and refrigerate for 10 minutes.

  6. Meanwhile, melt the chocolate in a saucepan, stirring constantly.

  7. Drizzle the melted chocolate over the balls and store in the refrigerator; the balls will firm up within 30 minutes.
