Red Velvet Truffles with Beet Powder

Ingredients

  • 1/2 cup pumpkin seeds
  • 1/2 cup coconut butter
  • 1 tbsp flax meal
  • 2 tbsp beet powder
  • 1 tbsp sweetener (molasses, maple, honey, coconut sugar, or 1 tsp monk fruit)
  • 1 tbsp cacao nibs

Coating components

  • dark chocolate chips
  • 1 tbsp coconut cream
  • 1 tsp coconut butter
  • cacao powder

Preparation

  1. Mix the chocolate coating ingredients together and melt over the stove.

  2. Blend the truffle ingredients in a food processor.

  3. Roll the mixture into balls and refrigerate for 10-15 minutes to harden.

  4. Dip the balls in the chocolate coating, sprinkle with coconut shreds, and store in the fridge.
