Red Velvet Truffles with Beet Powder
Ingredients
- 1/2 cup pumpkin seeds
- 1/2 cup coconut butter
- 1 tbsp flax meal
- 2 tbsp beet powder
- 1 tbsp sweetener (molasses, maple, honey, coconut sugar, or 1 tsp monk fruit)
- 1 tbsp cacao nibs
Coating components
- dark chocolate chips
- 1 tbsp coconut cream
- 1 tsp coconut butter
- cacao powder
Preparation
Mix the chocolate coating ingredients together and melt over the stove.
Blend the truffle ingredients in a food processor.
Roll the mixture into balls and refrigerate for 10-15 minutes to harden.
Dip the balls in the chocolate coating, sprinkle with coconut shreds, and store in the fridge.
