Almond Butter Cup Energy Balls
Ingredients
- 5 dates
- 1/4 cup almond butter
- 1/4 cup coconut butter
- 5 sprouted almonds
- 2 tbsp raw pumpkin seeds
- 2 tbsp cacao powder
- 1 tbsp sesame seeds
- 2 tbsp cacao nibs
- protein or collagen optional
Preparation
Soak dates for 10-30 minutes to soften them.
Blend the nuts and seeds until they are crumbly.
Add remaining ingredients except cacao nibs and blend until dough forms.
Transfer mixture to a bowl and mix in cacao nibs.
Use a mini ice cream scooper to form the balls.
Store in the fridge.
