Almond Butter Cup Energy Balls

Ingredients

  • 5 dates
  • 1/4 cup almond butter
  • 1/4 cup coconut butter
  • 5 sprouted almonds
  • 2 tbsp raw pumpkin seeds
  • 2 tbsp cacao powder
  • 1 tbsp sesame seeds
  • 2 tbsp cacao nibs
  • protein or collagen optional

Preparation

  1. Soak dates for 10-30 minutes to soften them.

  2. Blend the nuts and seeds until they are crumbly.

  3. Add remaining ingredients except cacao nibs and blend until dough forms.

  4. Transfer mixture to a bowl and mix in cacao nibs.

  5. Use a mini ice cream scooper to form the balls.

  6. Store in the fridge.
