Vegan Peppermint Brownie with Cookie Dough

Ingredients

Brownie

  • 200g dates
  • 100g walnuts
  • 2tbsp cacao powder
  • 1tbsp chia seeds
  • 2tbsp shredded coconut
  • peppermint oil

Cookie dough

  • 250g chickpeas
  • 100g dates
  • 2tbsp oats
  • 2tbsp coconut flour
  • 2tbsp almonds
  • cacao nibs

Preparation

  1. Blend all brownie ingredients together until well combined and press into a mold

  2. Blend all cookie dough ingredients until a dough forms

  3. Spread the cookie dough over the brownie base

  4. Chill in the refrigerator for at least 1 hour to set

  5. Cut into squares and serve
