Sweet Potato Protein Bites

Ingredients

  • 1.5 cups boiled, peeled, sweet potatoes
  • 1 tbsp coconut oil
  • 2 tbsp coconut butter
  • 1 serving protein powder
  • 1 tbsp Lucuma (or coconut sugar)
  • 2 tbsp coconut flour
  • 2 tbsp cacao nibs
  • 1 tbsp goji berries
  • Pinch of Cinnamon
  • Pinch of sea salt
  • Shredded coconut for sprinkling

Preparation

  1. In a food processor blend sweet potatoes with coconut oil and coconut butter just until combined, not to a point that it’s liquid or too creamy.

  2. Transfer to a bowl and add in the rest and mix well.

  3. Use a spoon or mini ice cream scooper to spoon on a sheet or plate and refrigerate to harden, at least 30 minutes.
