Sweet Potato Protein Bites
Ingredients
- 1.5 cups boiled, peeled, sweet potatoes
- 1 tbsp coconut oil
- 2 tbsp coconut butter
- 1 serving protein powder
- 1 tbsp Lucuma (or coconut sugar)
- 2 tbsp coconut flour
- 2 tbsp cacao nibs
- 1 tbsp goji berries
- Pinch of Cinnamon
- Pinch of sea salt
- Shredded coconut for sprinkling
Preparation
In a food processor blend sweet potatoes with coconut oil and coconut butter just until combined, not to a point that it’s liquid or too creamy.
Transfer to a bowl and add in the rest and mix well.
Use a spoon or mini ice cream scooper to spoon on a sheet or plate and refrigerate to harden, at least 30 minutes.
