Gingerbread Banana Muffins Packed with Protein and Fiber
Ingredients
- 2 flax eggs
- 2 ripe bananas
- 2 tbsp almond butter
- 1 tbsp maple syrup
- 2 tbsp coconut oil
- 1 inch grated ginger
- 1 tsp cinnamon
- 1 tbsp chia seeds
- 1 + 1/4 cup almond flour
- 1/4 cup coconut flour
- 1 scoop protein powder (I used @yoursuperfoods)
- 1 tsp cacao powder (I used @yoursuperfoods)
- 2 tbsp cacao nibs
- 1 tsp baking powder
- Sea salt
- Optional: Ashwagandha
Preparation
Mix all wet ingredients in a large bowl.
Add dry ingredients and mix until creamy batter forms.
Pour into lightly oiled muffin tray and bake at 350 for 20 minutes.
Spread @spreadthelove Almond butter and raw Manuka honey.
