Gingerbread Banana Muffins Packed with Protein and Fiber

Ingredients

  • 2 flax eggs
  • 2 ripe bananas
  • 2 tbsp almond butter
  • 1 tbsp maple syrup
  • 2 tbsp coconut oil
  • 1 inch grated ginger
  • 1 tsp cinnamon
  • 1 tbsp chia seeds
  • 1 + 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1 scoop protein powder (I used @yoursuperfoods)
  • 1 tsp cacao powder (I used @yoursuperfoods)
  • 2 tbsp cacao nibs
  • 1 tsp baking powder
  • Sea salt
  • Optional: Ashwagandha

Preparation

  1. Mix all wet ingredients in a large bowl.

  2. Add dry ingredients and mix until creamy batter forms.

  3. Pour into lightly oiled muffin tray and bake at 350 for 20 minutes.

  4. Spread @spreadthelove Almond butter and raw Manuka honey.
