Double Chocolate Banana Bread with Coconut Maple Glaze
Ingredients
- 2 flax eggs
- 2 ripe bananas
- 3 tbsp almond butter
- 2 tbsp coconut oil
- 3-4 tbsp maple syrup
- 1 tsp vanilla
- 1 tbsp chia seeds
- 3/4 cup buckwheat flour
- 1/3 cup almond flour
- 2 tbsp coconut flour
- 3 tbsp tigernut flour
- (Though I didn’t try, I would think All flours can be swapped for added almond or oat flour)
- 3 tbsp cacao powder
- 1/4 cup + 1 tbsp extra dark chocolate chips, divided
- baking soda
- Sea salt
Preparation
Blend bananas with almond butter in food processor until creamy
Add to large bowl with flax eggs
Add syrup, coconut oil, vanilla, and chia seeds, mix well
Add in flours and cacao powder and mix until batter starts to thicken
Fold in 1/4 cup chocolate chips
Add baking soda and a sprinkle of sea salt
Pour into a lightly oiled bread loaf pan
Sprinkle with a bit more sea salt and 1 tbsp chocolate chips
Bake at 350 for 20 minutes
Allow to cool for 30 minutes or overnight
For the glaze: melt 3 tbsp coconut butter with 2 tbsp maple syrup in a saucepan, stirring constantly
Pour over bread and spread
You’ll melt the chocolate on top too adding a swirl or goodness
