Double Chocolate Vegan Brownie Bread
Ingredients
- 2 flax eggs
- 2 ripe bananas
- 3 tbsp almond butter
- 2 tbsp coconut oil
- 3-4 tbsp maple syrup
- 1 tsp vanilla
- 1 tbsp chia seeds
- 3/4 cup buckwheat flour
- 1/3 cup almond flour
- 2 tbsp coconut flour
- 3 tbsp tigernut flour
- 3 tbsp cacao powder
- 1/4 cup + 1 tbsp extra dark chocolate chips, divided
- 1 tsp baking soda
- Pinch of sea salt
Glaze
- 3 tbsp coconut butter
- 2 tbsp maple syrup
Preparation
Blend bananas with almond butter in a food processor until creamy. Add to a large bowl with flax eggs. Add syrup, coconut oil, vanilla, and chia seeds, and mix well.
Add the flours and cacao powder and mix until the batter starts to thicken. Fold in 1/4 cup chocolate chips.
Add baking soda and a sprinkle of sea salt.
Pour the batter into a lightly oiled bread loaf pan. Sprinkle with a bit more sea salt and 1 tablespoon chocolate chips.
Bake at 350 degrees Fahrenheit for 20 minutes. Allow to cool for 30 minutes or overnight.
For the glaze, melt 3 tablespoons coconut butter with 2 tablespoons maple syrup in a saucepan, stirring constantly. Pour over the bread and spread. The chocolate on top will melt, adding a swirl.
