Paleo Pumpkin Mini Waffles

Ingredients

  • 1/3 cup canned pumpkin purée
  • 2 eggs
  • 1/4 cup cashew milk
  • 2 tbsp coconut oil
  • 1/2 cup almond flour
  • 1/4 cup tapioca flour (optional)
  • 1 tsp pumpkin spice
  • 1 tsp baking soda

Toppings

  • Banana
  • Cacao nibs
  • Almond butter
  • Maple syrup

Preparation

  1. In a mixing bowl, combine dry ingredients: almond flour, tapioca flour (if using), pumpkin spice, and baking soda.

  2. In another bowl, whisk together wet ingredients: pumpkin purée, eggs, cashew milk, and coconut oil.

  3. Mix wet and dry ingredients until a smooth batter forms. Adjust consistency with additional cashew milk if too thick.

  4. Preheat waffle iron to medium-high heat.

  5. Pour batter into the waffle iron and cook for 3-5 minutes or until golden and crispy.

  6. Serve waffles with desired toppings.
