Paleo Pumpkin Mini Waffles
Ingredients
- 1/3 cup canned pumpkin purée
- 2 eggs
- 1/4 cup cashew milk
- 2 tbsp coconut oil
- 1/2 cup almond flour
- 1/4 cup tapioca flour (optional)
- 1 tsp pumpkin spice
- 1 tsp baking soda
Toppings
- Banana
- Cacao nibs
- Almond butter
- Maple syrup
Preparation
In a mixing bowl, combine dry ingredients: almond flour, tapioca flour (if using), pumpkin spice, and baking soda.
In another bowl, whisk together wet ingredients: pumpkin purée, eggs, cashew milk, and coconut oil.
Mix wet and dry ingredients until a smooth batter forms. Adjust consistency with additional cashew milk if too thick.
Preheat waffle iron to medium-high heat.
Pour batter into the waffle iron and cook for 3-5 minutes or until golden and crispy.
Serve waffles with desired toppings.
