Fluffy Paleo Chocolate Gingerbread Waffles
Ingredients
- 1/3 cup canned pumpkin purée or sweet potato purée
- 2 tbsp blackstrap molasses
- 2 eggs
- 1/4 cup cashew milk (add more if the batter is too thick)
- 2 tbsp coconut oil
- 1/2 cup almond flour
- 1/4 cup tapioca flour
- 1-2 tbsp cacao powder
- 1/2 tsp ground ginger
- 1/4 tsp cinnamon
- 1/4 tsp allspice
- 1 tsp baking soda
Toppings
- Banana
- Hu Kitchen gem
- Georgia Grinders hazelnut butter
- Maple syrup
- Purely Elizabeth granola
- Sprinkle of powdered sugar or coconut flour
Preparation
Mix all wet ingredients together in a bowl
Mix all dry ingredients together in another bowl
Combine the wet and dry mixtures to form a batter, adding more cashew milk if too thick
Preheat the waffle iron
Pour the batter into the waffle iron and cook until golden and fluffy
