Fluffy Paleo Chocolate Gingerbread Waffles

Ingredients

  • 1/3 cup canned pumpkin purée or sweet potato purée
  • 2 tbsp blackstrap molasses
  • 2 eggs
  • 1/4 cup cashew milk (add more if the batter is too thick)
  • 2 tbsp coconut oil
  • 1/2 cup almond flour
  • 1/4 cup tapioca flour
  • 1-2 tbsp cacao powder
  • 1/2 tsp ground ginger
  • 1/4 tsp cinnamon
  • 1/4 tsp allspice
  • 1 tsp baking soda

Toppings

  • Banana
  • Hu Kitchen gem
  • Georgia Grinders hazelnut butter
  • Maple syrup
  • Purely Elizabeth granola
  • Sprinkle of powdered sugar or coconut flour

Preparation

  1. Mix all wet ingredients together in a bowl

  2. Mix all dry ingredients together in another bowl

  3. Combine the wet and dry mixtures to form a batter, adding more cashew milk if too thick

  4. Preheat the waffle iron

  5. Pour the batter into the waffle iron and cook until golden and fluffy
