Vegan Gluten Free Bread

Ingredients

  • 1 cup almond flour (more if needed);
  • 1/4 cup coconut flour;
  • 1/4 cup chia seeds (soaked in water - vegan egg);
  • 1/4 cup flax seed (in water - flax egg);
  • 1 tbsp baking powder;
  • 1 tsp baking soda;
  • 1 tsp xanthan gum ;
  • 1 tsp salt;
  • 1/2 cup coconut oil;
  • 1/2 cup apple purée;
  • 3 tbsp white wine vinegar or apple cider vinegar;

Preparation

  1. Mix dry ingredients then add the wet ingredients

  2. Pour the mixture into a coconut oil greased silicone loaf pan and bake for 40-50min at 350F

  3. Allow to cool before taking the bread out of the pan
