Simple Tasty Vegan Gluten-Free Waffles

Ingredients

  • 400 ml soy milk or oat milk
  • 5 tbsp melted coconut oil
  • 2 tsp apple cider vinegar
  • 400 ml oat flour (gluten free if you want gluten free waffles)
  • 100 ml almond flour
  • 3 tbsp chia seeds
  • 1.5 tsp baking powder
  • 0.5 tsp salt
  • Coconut oil (for the waffle iron)

Preparation

  1. Blend the waffle batter in a high-speed blender for 1.5-2 minutes until smooth. Pour into a bowl. The batter will thicken slightly after a few minutes due to chia seeds.

  2. Preheat the waffle iron until very hot. Grease the bottom plate with coconut oil, pour about 75 ml batter per waffle, and spread it out with a knife. Grease the top plate with coconut oil and bake each waffle for about 2 minutes until lightly golden brown. Grease the iron before each new waffle.
