Green Waffles with Optional Eggs

Ingredients

  • 1 1/2 cups oat flour
  • 1 large brown banana or 2 tbsp coconut sugar
  • 2 tsp baking powder
  • 1 1/2 cups unsweetened almond milk
  • 3 Tbsp coconut oil
  • 2 cups spinach leaves
  • pinch of salt

Optional

  • Eggs for frying or poaching

Preparation

  1. Heat up your waffle maker.

  2. Blitz all ingredients in a nutribullet without over-blitzing.

  3. Grease the waffle maker plates with coconut oil.

  4. Pour out some batter and let it cook until brown.

  5. Place the waffles in the oven at 100°C to keep warm if desired.

  6. Fry or poach an egg to serve with the waffles if desired.
