Double Chocolate Tahini Cookies
Ingredients
- 2 flax eggs (2 tbsp flax meal + 4 tbsp water)
- 3 tbsp unsweetened applesauce (Or swap with coconut oil)
- 1 tsp pure Vanilla
- 2 tbsp maple syrup
- 2 tbsp tahini
- 1/4 cup Lucuma or coconut sugar
- 2 tbsp protein powder (optional)
- 2 tbsp cacao powder
- 2 tbsp coconut flour
- 1 tbsp psyllium husk (optional)
- 1 tsp baking powder
- 1/2 tsp baking soda
- sprinkle sea salt
- sprinkle extra dark chocolate
Preparation
Mix all wet ingredients in a large glass bowl.
Add dry ingredients except for sea salt and chocolate chips. Mix until sticky dough forms.
Spoon into a cookie sheet, sprinkle with sea salt and chocolate chips (I did a few chips per cookie).
Bake at 350 for 11-14 minutes until soft but cooked through.
