Double Chocolate Tahini Cookies

Ingredients

  • 2 flax eggs (2 tbsp flax meal + 4 tbsp water)
  • 3 tbsp unsweetened applesauce (Or swap with coconut oil)
  • 1 tsp pure Vanilla
  • 2 tbsp maple syrup
  • 2 tbsp tahini
  • 1/4 cup Lucuma or coconut sugar
  • 2 tbsp protein powder (optional)
  • 2 tbsp cacao powder
  • 2 tbsp coconut flour
  • 1 tbsp psyllium husk (optional)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • sprinkle sea salt
  • sprinkle extra dark chocolate

Preparation

  1. Mix all wet ingredients in a large glass bowl.

  2. Add dry ingredients except for sea salt and chocolate chips. Mix until sticky dough forms.

  3. Spoon into a cookie sheet, sprinkle with sea salt and chocolate chips (I did a few chips per cookie).

  4. Bake at 350 for 11-14 minutes until soft but cooked through.
