Chocolate Chunk Tahini Cookies
Ingredients
- 1 cup oat flour
- 1 cup tahini
- 1/4 cup date syrup
- 2 flax eggs (1 tbsp flax / 3 tbsp water = 1 egg)
- Pinch of salt
- 1/2 tsp baking powder
- dark chocolate
Preparation
Prepare flax eggs by mixing 1 tbsp ground flaxseed with 3 tbsp water and let sit for 5-10 minutes to gel
In a bowl, combine dry ingredients: oat flour, pinch of salt, and baking powder
In another bowl, mix wet ingredients: tahini, date syrup, and the prepared flax eggs
Combine the wet and dry mixtures together until a dough forms
Fold in dark chocolate chunks or pieces
Preheat oven to 180°C
Form the dough into cookie shapes and place on a baking sheet lined with parchment paper
Bake for 10-15 minutes or until golden brown
