Chocolate Chunk Tahini Cookies

Ingredients

  • 1 cup oat flour
  • 1 cup tahini
  • 1/4 cup date syrup
  • 2 flax eggs (1 tbsp flax / 3 tbsp water = 1 egg)
  • Pinch of salt
  • 1/2 tsp baking powder
  • dark chocolate

Preparation

  1. Prepare flax eggs by mixing 1 tbsp ground flaxseed with 3 tbsp water and let sit for 5-10 minutes to gel

  2. In a bowl, combine dry ingredients: oat flour, pinch of salt, and baking powder

  3. In another bowl, mix wet ingredients: tahini, date syrup, and the prepared flax eggs

  4. Combine the wet and dry mixtures together until a dough forms

  5. Fold in dark chocolate chunks or pieces

  6. Preheat oven to 180°C

  7. Form the dough into cookie shapes and place on a baking sheet lined with parchment paper

  8. Bake for 10-15 minutes or until golden brown
