Healthy Skillet Chocolate Chip Cookie
Ingredients
- 3/4 cup chickpeas, drained but not rinsed
- 3 TB date syrup (can sub maple)
- 3 TB almond butter (can sub any nut butter)
- 1/4 cup oat flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/8 tsp Himalayan salt
- 1/4 cup dairy free choc chips @enjoylifefoods
Preparation
Preheat oven to 350
Place all ingredients minus chocolate chips into food processor
Blend until smoothe. Will look exactly like cookie dough but slightly sticky
Grease skillet with coconut oil
I’m a separate bowl, combine cookie dough and food in chocolate chips
Full skillet with dough and smoothe until flat
Bake appx 20 minutes Serve when it’s still warm and top with ice cream or coco whip if desired!!
