Healthy Chocolate Chip Cookie Cereal

Ingredients

  • 25g oat flour
  • 1/2 tsp baking powder
  • 80g tinned chickpeas
  • 20g vanilla vegan protein
  • 10g natural almond milk yoghurt
  • 15g smooth peanut butter
  • 35ml unsweetened almond milk
  • 15g dark chocolate chips

Protein milk

  • 15g vanilla vegan protein powder
  • 150ml unsweetened almond milk

Preparation

  1. Preheat the oven to 180 degrees Celsius. Line a baking tray with greaseproof paper.

  2. Using a high speed blender, mix all the ingredients except the chocolate chips together.

  3. Dollop the mixture using a teaspoon onto the tray. Use approximately 1 tablespoon per cookie and gently press down to flatten slightly.

  4. Add the chocolate chips on top.

  5. Bake for 20 minutes on the middle shelf of the oven.

  6. Serve with milk or protein milk.

Protein milk

  1. Blend 15g vanilla vegan protein powder with 150ml cold unsweetened almond milk.
