Vegan Peanut Butter Chocolate Cookies

Ingredients

  • 2 flax eggs
  • 4 tbsp olive oil or coconut oil
  • 3.5 tbsp maple syrup
  • 1/4 cup peanut butter
  • 1/4 cup coconut flour
  • 1/2 cup almond flour
  • 1 tsp cacao powder
  • 1 tbsp chia seeds
  • 1/4 cup dark chocolate chips
  • 1 tsp baking soda
  • Sprinkle sea salt

Preparation

  1. Preheat oven to 350 degrees.

  2. In a large mixing bowl, combine all wet ingredients and mix well.

  3. Add flours, cacao powder, chia seeds and baking soda and mix until dough forms.

  4. Fold in chocolate chips.

  5. Spoon onto a parchment paper lined baking sheet.

  6. Sprinkle the cookies with sea salt.

  7. Bake at 350 for 12-14 minutes.

  8. Check on them around 10 minutes to make sure the bottom doesn’t burn.

  9. Enjoy!
