Vegan Peanut Butter Chocolate Cookies
Ingredients
- 2 flax eggs
- 4 tbsp olive oil or coconut oil
- 3.5 tbsp maple syrup
- 1/4 cup peanut butter
- 1/4 cup coconut flour
- 1/2 cup almond flour
- 1 tsp cacao powder
- 1 tbsp chia seeds
- 1/4 cup dark chocolate chips
- 1 tsp baking soda
- Sprinkle sea salt
Preparation
Preheat oven to 350 degrees.
In a large mixing bowl, combine all wet ingredients and mix well.
Add flours, cacao powder, chia seeds and baking soda and mix until dough forms.
Fold in chocolate chips.
Spoon onto a parchment paper lined baking sheet.
Sprinkle the cookies with sea salt.
Bake at 350 for 12-14 minutes.
Check on them around 10 minutes to make sure the bottom doesn’t burn.
