Keto Peanut Butter and Jam Bagel

Ingredients

Chia jam

  • 125 g berries fresh or frozen
  • 3 tbsp chia seeds
  • 1 tsp lemon juice
  • 1 tbsp granulated stevia
  • 80 ml water

Bagel

  • 1 1/2 cups almond flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon xanthan gum
  • 1/4 teaspoon salt
  • 3 tablespoons psyllium husk powder
  • 2 flax eggs
  • 1/2 cup warm water
  • 2 tbsp Avocado oil
  • Pepitas to top

Preparation

Chia jam

  1. If using frozen berries, allow them to defrost. Mash the berries with a fork until a lumpy puree is created.

  2. Add the chia seeds, lemon juice, sweetener and water. Mix.

  3. Pour into a little jam jar or storage container and place in the fridge to set.

  4. Once the chia jam has set, mix again to ensure all the berries and chia seeds are evenly distributed.

Bagel baking

  1. Preheat oven to 130C/250F.

  2. Mix almond flour, xanthan gum, baking soda and salt together in a bowl.

  3. In a separate bowl, mix flax egg and warm water together. Stir in psyllium husk until there are no clumps.

  4. Add liquid ingredients to dry ingredients.

  5. Coat bagel mold with avocado oil. Press dough into mold.

  6. Place in oven and bake for 45 minutes.

  7. Remove and cool for 15 minutes before slicing.

Assembly

  1. Slice the bagel and spread with peanut butter and chia jam.
