Keto Lemon Cakes

Ingredients

  • 1/3 cup almond flour
  • 1 tbsp coconut sugar (or stevia or other sweetener of choice)
  • 1 tsp gf baking powder
  • 1 tsp poppy seeds (optional)
  • 2 tbsp coconut oil
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 2 tbsp coconut cream
  • 1/4 tsp vanilla extract

Preparation

  1. Preheat oven to 150°C (300°F) & place small ovenproof dish filled with water in the oven

  2. This will help the cake stay fluffy & prevent drying

  3. In small bowl, combine almond flour, coconut sugar, baking powder, & poppy seeds (if using)

  4. In another bowl, whisk egg, butter, lemon zest, lemon juice, cream, & vanilla

  5. Add dry ingredients to bowl and mix until well combined

  6. Divide mixture among muffin tins, place in oven & bake for about 20 mins, or until set & slightly golden on top

  7. Store at room temp. for 1 day, or in fridge for up to 5 days

  8. Serve with coconut cream
