Keto Lemon Cakes
Ingredients
- 1/3 cup almond flour
- 1 tbsp coconut sugar (or stevia or other sweetener of choice)
- 1 tsp gf baking powder
- 1 tsp poppy seeds (optional)
- 2 tbsp coconut oil
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 2 tbsp coconut cream
- 1/4 tsp vanilla extract
Preparation
Preheat oven to 150°C (300°F) & place small ovenproof dish filled with water in the oven
This will help the cake stay fluffy & prevent drying
In small bowl, combine almond flour, coconut sugar, baking powder, & poppy seeds (if using)
In another bowl, whisk egg, butter, lemon zest, lemon juice, cream, & vanilla
Add dry ingredients to bowl and mix until well combined
Divide mixture among muffin tins, place in oven & bake for about 20 mins, or until set & slightly golden on top
Store at room temp. for 1 day, or in fridge for up to 5 days
Serve with coconut cream
