Berry Burst ⚡️ Green Biscuits

Ingredients

  • 1/2 cup kale chopped ultra fine
  • 1/2 cup frozen blueberries or raspberries
  • 1 batch of sweet chia ‘eggs’
  • 1 tsp. vanilla bean paste
  • 1 tsp. cinnamon
  • 1/3 cup coconut flour
  • 2 tbsp. desicated coconut
  • 1 tsp baking powder

Preparation

  1. Preheat oven to 180 and line baking tray with paper

  2. In a large bowl mix the kale, cinnamon, coconut flour, desiccated coconut and baking powder

  3. Then add the sweet chia ‘eggs’ and vanilla bean past, stir to combine

  4. Next add the berries and gently fold through. The mix should be nicely congealed

  5. Shape into about 8 round cookies, place on the tray and bake for 25minutes or until lightly golden
