Crispy Caramel Apple Bars

Ingredients

Crust/topping

  • 4 cups flake cereal (I used @onedegreeorganics maize flakes)
  • 1 cup medjool dates, pitted
  • 1/4 cup coconut oil
  • 1/2 tsp salt

Apples

  • 3–4 small apples, diced (I used granny smith)
  • 1/4 cup coconut sugar
  • 1/4 cup water
  • 1 tsp cinnamon
  • 2 tbsp lemon juice
  • 1 tbsp arrowroot or cornstarch

Preparation

  1. Grind the cereal in a food processor

  2. Add the rest of the crust ingredients and process until sticky/crumbly

  3. Press half into a lined baking dish

  4. Combine all the apple ingredients in a bowl and toss to coat

  5. Cook over medium heat for 8-10 minutes until the apples are soft and caramelized

  6. Spread on top of the crust

  7. Top with the rest of the crumble, pressing in slightly

  8. Bake for 25 minutes at 350ºF until the top is golden

  9. Cool, then slice
