Vegan Paleo Tahini Mocha Muffins

Ingredients

  • 3/4 cup applesauce
  • 3/4 cup tahini or almond butter
  • 1/2 cup coconut sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon coffee extract
  • 1/4 cup coconut flour
  • 1/4 cup tapioca starch
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup Hu Kitchen Gems

Preparation

  1. Whisk together the applesauce, tahini, coconut sugar, apple cider vinegar, and coffee extract.

  2. Stir in the coconut flour, tapioca starch, baking soda, and salt.

  3. Scoop the batter into a greased muffin pan, filling each cup three-quarters of the way.

  4. Top each muffin with 5-6 Gems.

  5. Bake for 25-30 minutes at 350 degrees Fahrenheit.

  6. Allow to cool for at least 15 minutes before removing from the pan.
