Chewy Lemon Chia Cookies
Ingredients
- 1 1/2 cup almond flour
- 3 tbsp. coconut flour
- 1/2 tsp. baking powder
- 1 tbsp. chia seeds
- 1/4 cup coconut oil (melted)
- 1/4 cup Agave In The Raw
- Juice from 1 whole lemon
Preparation
Preheat oven to 350F and spray or line a baking sheet.
In a large bowl, whisk together the melted coconut oil, Agave In The Raw, and lemon juice.
Once well combined, stir in the dry ingredients.
Use a small spoon to make little dough balls, place them on the baking sheet, and slightly press down.
Bake for 9-10 minutes and let them cool for 1-2 minutes on the pan before moving to a cooling rack.
