Chewy Lemon Chia Cookies

Ingredients

  • 1 1/2 cup almond flour
  • 3 tbsp. coconut flour
  • 1/2 tsp. baking powder
  • 1 tbsp. chia seeds
  • 1/4 cup coconut oil (melted)
  • 1/4 cup Agave In The Raw
  • Juice from 1 whole lemon

Preparation

  1. Preheat oven to 350F and spray or line a baking sheet.

  2. In a large bowl, whisk together the melted coconut oil, Agave In The Raw, and lemon juice.

  3. Once well combined, stir in the dry ingredients.

  4. Use a small spoon to make little dough balls, place them on the baking sheet, and slightly press down.

  5. Bake for 9-10 minutes and let them cool for 1-2 minutes on the pan before moving to a cooling rack.
