Paleo Gluten-Free Fig Newton Cookies
Ingredients
Cookie
- 1 flax egg
- 1 tbsp coconut oil
- 1 cup almond flour
- 1/4 cup coconut flour
- 1 scoop protein (optional)
- 1/2 tbsp Lucuma powder
- 1 1/2 tbsp maple syrup
- 3 tbsp almond milk
- 1 tsp Baking soda
- Sea salt to sprinkle
Fig filling
- 6 dried figs
- 2 tbsp coconut butter
- 1 tbsp chia seeds
- 1/4 cup pumpkin seeds
- 1 tbsp blackstrap molasses
- 1 tsp ginger
- Pinch of sea salt
- 3 tbsp water
Preparation
Mix cookie ingredients in a large bowl and set aside.
In a food processor, mix all fig filling ingredients and blend until gooey dough forms.
Spoon a thin layer of cookie dough into a baking dish, using half of the dough.
Spread the fig filling across.
Pour the remaining dough over the top.
Sprinkle sea salt.
Bake at 350 for 16-20 minutes.
