Paleo Gluten-Free Fig Newton Cookies

Ingredients

Cookie

  • 1 flax egg
  • 1 tbsp coconut oil
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1 scoop protein (optional)
  • 1/2 tbsp Lucuma powder
  • 1 1/2 tbsp maple syrup
  • 3 tbsp almond milk
  • 1 tsp Baking soda
  • Sea salt to sprinkle

Fig filling

  • 6 dried figs
  • 2 tbsp coconut butter
  • 1 tbsp chia seeds
  • 1/4 cup pumpkin seeds
  • 1 tbsp blackstrap molasses
  • 1 tsp ginger
  • Pinch of sea salt
  • 3 tbsp water

Preparation

  1. Mix cookie ingredients in a large bowl and set aside.

  2. In a food processor, mix all fig filling ingredients and blend until gooey dough forms.

  3. Spoon a thin layer of cookie dough into a baking dish, using half of the dough.

  4. Spread the fig filling across.

  5. Pour the remaining dough over the top.

  6. Sprinkle sea salt.

  7. Bake at 350 for 16-20 minutes.
