Vegan Gluten Free Trail Mix Breakfast Bars
Ingredients
- 2 flax eggs
- 2 tbsp unsweetened apple sauce
- 2 tbsp coconut oil
- 2 tbsp almond milk
- 1/4 cup maple syrup
- 1/4 cup tahini
- 1 1/2 cup soaked GF rolled oats
- 2/3 cup almond flour
- 3 tbsp arrowroot flour (or add additional almond flour)
- 2 tbsp coconut flour
- 2 tbsp Lucuma powder (optional)
- 2 tbsp goji berries
- 1/4 cup cashews
- 3 tbsp cacao chips (or dark chocolate chips)
- 1 tsp Sea salt
- 1 tsp baking soda
Preparation
Mix all ingredients well in a large glass bowl until thick and creamy batter forms.
Pour batter into a lightly oiled bread pan.
Bake for 20 minutes at 350 degrees.
Allow to cool and enjoy.
Store in the fridge for about a week.
