Vegan Gluten Free Trail Mix Breakfast Bars

Ingredients

  • 2 flax eggs
  • 2 tbsp unsweetened apple sauce
  • 2 tbsp coconut oil
  • 2 tbsp almond milk
  • 1/4 cup maple syrup
  • 1/4 cup tahini
  • 1 1/2 cup soaked GF rolled oats
  • 2/3 cup almond flour
  • 3 tbsp arrowroot flour (or add additional almond flour)
  • 2 tbsp coconut flour
  • 2 tbsp Lucuma powder (optional)
  • 2 tbsp goji berries
  • 1/4 cup cashews
  • 3 tbsp cacao chips (or dark chocolate chips)
  • 1 tsp Sea salt
  • 1 tsp baking soda

Preparation

  1. Mix all ingredients well in a large glass bowl until thick and creamy batter forms.

  2. Pour batter into a lightly oiled bread pan.

  3. Bake for 20 minutes at 350 degrees.

  4. Allow to cool and enjoy.

  5. Store in the fridge for about a week.
