Gluten-Free Banana Bread Squares with Chocolate Topping

Ingredients

Banana bread

  • 2 bananas, medium sized and ripe
  • 1 large cage free egg
  • 1/2 cup rolled oats, gluten-free
  • 1/4 cup almond butter
  • 2 tbsp honey
  • 1/4 cup almond flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • 2 tbsp flaxseed meal

Topping

  • 1 cup dark chocolate chips or bar
  • 1 tbsp coconut oil
  • crushed @justins organic nut butter covered nuts, crushed (I used their almond butter covered almonds)

Preparation

  1. Preheat the oven to 375F and line an 8x8 dish with parchment paper.

  2. Put your oats in the blender or food processor - blend until it’s powder.

  3. Begin to mix all ingredients in a medium size bowl except for the toppings and mix until smooth and creamy.

  4. Pour batter into the prepared pan, using a spatula to distribute evenly.

  5. Bake for about 20 minutes!

  6. Let cool in the pan for about 15 minutes.

  7. While waiting, heat the chocolate and coconut oil over medium heat on the stove top - once melted pour on top of the banana bread.

  8. Lastly, sprinkle the crushed almond butter covered nuts all across the top!
